Eccles Hotel is one of Ireland’s oldest hotels, dating back to 1745. Since it first opened its doors, Eccles has played host to some of Ireland’s most famous names, including WB Yeats, George Bernard Shaw and Maeve Binchy. Legend of the silver screen Maureen O’Hara was enamoured with the hotel, and Pippa Middleton stayed in Eccles for a wedding last summer!
Eddie Atwell – Head Chef
Head Chef Eddie Attwell came to West Cork after almost two decades in the hospitality industry, including working in 2* Michelin restaurant Lenclume in Cumbria, and arrived at Eccles fresh from his role as Head Chef at St Kyran’s Country House Hotel, which won best Hotel Restaurant in Cavan and Ulster in the 2017 RAI awards.
Eddie is extremely passionate about sourcing the best of local produce, ensuring Eccles’ tradition of using the finest ingredients from West Cork carries on.
Joining Eddie in the kitchen will be Rebecca Doran and Andrej Zak, whom he worked with in St Kyran’s. Senior Chef Doran and Junior Chef Zak won silver and bronze in their respective categories at IFEX 2018.
