Tartines Three Ways

Aisling Larkin has shared her favourite toppings for these crunchy, top heavy slices of bread that make for a delicious party snack.

Coronation Chicken with rocket, picked red onion and smoked almonds 

  1. Slice the bread very thinly, brush with olive oil and bake in an oven at 180 for 12 minutes turning half way to toast fully.
  2. Pickle the onion: Slice the red onion and sit in a kilner jar with the vinegar, water, sugar and salt.
  3. Preheat the oven to 180. Pop the chicken in an oven proof dish. Sprinkle on the curry spices and the butter and oil. Roast in the oven for 25minutes.
  4. Mix the mayonnaise, turmeric and seasoning in a bowl. Shred the chicken and stir in the sauce.
  5. Assembly : place the chicken mix on the tartine, top with fresh rocket, the pickled onions and the chopped smoked almonds.

Summer Pea Guacamole, Halloumi & Spicy Peanut Rayu

  1. Boil the frozen pea in a little water for 4 minutes. Drain. Blitz in a nutri-bullet on high for 1 minute with 1 tbsp olive oil. When smooth, add in the wasabi, seasoning, lime juice and fresh coriander.
  2. Slice the sourdough bread thinly. Lay on an oven tray and paint with a little olive oil. Season with salt and pepper.
  3. Slice the halloumi and cook until golden ( grill or fry ) .
  4. Dollop the summer pea guacamole on the tartine, lay on slices of halloumi and dot with the spicy rayu. Garnish with fresh coriander and finely sliced red chili.
  5. Enjoy.

Whipped Feta with Balsamic Roast Strawberries and Basil

  1. Preheat the oven to 180 . Slice the strawberries in half and drizzle with balsamic vinegar, Roast for 20 minutes.
  2. Slice the bread very thinly, brush with olive oil and bake in an oven at 180 for 12 minutes turning half way to toast fully.
  3. Whipped Feta: Place the feta, mayonnaise, sour cream, olive oil, herbs and seasoning in the food processor. Blitz until it forms a smooth paste. Put into a small bowl, cover and chill in the fridge until very cool.
  4. Assembly : Spread a very thick layer of whipped feta on the toast, top with some roast strawberries. Add some fresh strawberries for garnish and sprinkle over some chiffonades of basil
  5. Enjoy.

4 slices sour dough bread ( thinly sliced )

Handful fresh rocket

30g smoked almonds ( chopped )

Red onion

50mls red wine vinegar

50mls water

15g sugar

5g salt

150g frozen peas

1 large or 2 medium avocados

1/4 tsp wasabi

1 tsp chopped fresh coriander

Juice 1 lime

1/4 tsp salt and black pepper

4 slices sourdough bread toasted

1 tbsp oil

1 180g block halloumi

4 tsp peanut rayu

Fresh coriander and slices red chilli to garnish

Whipped Feta with Balsamic Roast Strawberries and Basil

200g Irish Feta

50g mayonnaise

50g sour cream

1 tbsp olive oil

½ tsp chopped mint, oregano, parsley and coriander

½ tsp black pepper

300g strawberries ( or tomatoes )

1 tbsp balsamic

Springs of fresh basil
