Jerk Chicken Tacos

Ingredients

Ingredients for Marinade:

  • 1/4 glass fruity Red wine
  • 1 shot Dark rum
  • 100 grams of tinned chipotle peppers
  • 2 table-spoons lemon juice
  • 6 cloves garlic
  • 1 small Spanish onion
  • 4 red chilli
  • Small bunch coriander
  • 2 tablespoons honey
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
Ingredients for Avocado Salsa:
  • 3 ripe avocados
  • 2 vine tomatoes
  • 1 small red onion
  • 1 small medium heat red chilli
  • Small bunch fresh coriander
  • 1 whole lime juice
  • 1 table spoon extra virgin olive oil
  • Pinch of salt
Ingredients for Chorizo:
  • 12 thin slices of chorizo
Ingredients for Red pepper Mayo:
  • Buy a small jar of regular mayo or make your own.
  • 1 red pepper.
  • Twist olive oil,
  • Salt & pepper.
 

How to Prepare Jerk Marinade:

  • Place in a blender and purée,
  • Marinade 6 chicken breast for 6 hours or overnight.

How to Prepare Avocado Salsa:

  • Very simply, peel and chop (1/2 cm dice) ingredients add lime, olive and gently stir together.

How to Prepare Chorizo:

  • Pan-fry over a medium heat until crisp.
  • Allow to cool and slice into match stick size pieces.

How to Prepare Red Pepper Mayo:

  • Cut red pepper in half and de-seed.
  • Place in a medium oven with a little salt and pepper, drizzle with olive oil for roast
  • approx 45-50 minutes or until very soft,
  • Allow to cool, peel off skin.
  • Put mayo and roasted red pepper into a blender.

To Serve:

  • Fry chicken breasts on a hot pan for 2 minutes each side and finish in a 180c oven for 12-14 mins or until done.
  • Slice each chicken breast into 6 pieces.
  • In a dry non-stick frying pan on a medium heat warm through one min a side 18 authentic Mexican tortillas. (20cm size)
  • Stack on a plate, covered with a tea towel.

Assembly:

  • Place 3 tacos on a plate, put one tablespoon of avocado salsa, chopped iceberg lettuce, 2 slices of chicken, fried chorizo and drizzle with red pepper mayo.
  • Garnish with fresh coriander and a wedge of lime.
