French Onion Soup

  1. Start with a brown butter or beurre noisette in a saucepan 
  2. Thinly slice onions, fry onion stirring constantly for 15 minutes till brown
  3. Add 1 tablespoon garlic puree
  4. Add thyme
  5. Add bay leaves
  6. Cook for 8 minutes continuous stirring
  7. Add chicken stock
  8. Add a tied off muslin cloth of 3 cloves chopped garlic and 1 small cinnamon stick
  9. Boil for 20 minutes and simmer for 30 minutes
  10. Add 1 tablespoon good quality dark soya sauce
  11. Season to taste

  • 1 lt chicken/ beef stock
  • 2 garlic cloves
  • 1 bay leaves
  • 1 small stick of cinnamon
  • 1/ tablespoon of soda sauce( optional)
  • Salt & pepper to taste.
