Ingredients

  • Unsalted Butter
  • Miso Paste
  • Dried Nori
  • Seaweed Paste
  • Dijon Mustard
  • Shucked Oyster
  • Ginger

Description: 

Grilled with blowtorches, this Oyster has an intense seaside flavour thanks to the seaweed butter. There is a gentle sweetness from the mustard and miso, which is balanced by the clean, tart ginger.

Method:

  • Make a compound butter of Nori & Japanese Seaweed paste.( Unsalted butter, Miso paste, dried nori, seaweed paste and Dijon mustard)
  • Smear a teaspoon of the softened butter onto the Shucked Oyster.
  • Blowtorch it for at least 60 seconds.
  • Garnish with pickled ginger.
