What is your favourite dish on the menu at The Greenhouse and why?

The Menton Lemon, Frozen & Poached Meringue, Seaweed Condiment because it’s fun to plate, and has a good balance of textures as well as flavours.

 

What would be your desert island meal? (Starter/Main/Dessert)

Starter:

Scallops, mussels, any good quality shellfish really.

Main:

I'd have to be the risotto cacio e pepe that Stefano Battaini at work makes for staff meal.

Dessert:

It would have to be a Baked Cheesecake

 

What is your favourite seasonal dish?

Warm rice pudding, stewed berries and vanilla ice cream.

 

What drink would you pair with it?

I’d have to say a cup of tea, very boring I know!

 

What is your favourite restaurant in Dublin and why?

One of my favourite restaurants in Dublin would have to be Clanbrassil House because the food is delicious, and I really enjoyed the family-style option to share with friends.

 

What is your favourite dish in Dublin and why?

My favourite dish isn’t in Dublin, it’s in the Courthouse Restaurant in Carrickmacross, their duck liver pate has been my favourite for years.

 

Who is your most hotly tipped young chef in Ireland today?

One of the best young chefs I’ve met is Matthew Stafford, he is so calm and collected. He is meticulous in his attention to detail. I think he’s going to do amazing things. He also works in the Greenhouse which might make me bias but I get to witness it firsthand.
