Q&A with Sean Massey

We caught up with Sean Massey, Sous Chef at Chapter One... check out what he told us!

What is one of your favourite dishes at Chapter One and why?

It's hard to choose between so many great dishes really. If I had to probably the Duck. We roast it on the crown to maximise flavour, then its finished with a fish caramel glaze & bonito sesame seeds. It was one of the first dishes I was cooking when I started there.


What would be your desert island meal? (Starter/Main/Dessert)


Old school prawn cocktail.


Either a ribeye from l’gueuleton with all the trimmings or a roast chicken dinner.


Anything that Stan (Head Pastry Chef, Darren Hogarty) makes in work for sure!! (and a cheese board)


What is your favourite seasonal dish?

My favourite seasonal dish would have to be venison, I love the flavour and its fun to work with. It matches with so many unique ingredients too.


What drink would you pair with it?

Definitely a good red! A nice bottle of Bordeaux or Hermitage would be perfect.


What is your favourite restaurant in Dublin and why?

There's so many great restaurants and food options in Dublin these days. I have a lot of favourites for all occasions. The ultimate has to be The Greenhouse, Mickael is the best in the country and never fails to amaze. More casual with friends you cant beat Drury Buildings on a Sunday afternoon.


What is your favourite dish in Dublin and why?

Probably the flan de queso from Uno Mas, it's perfect every time. That or a philly steak sambo from 147 Deli.


Who is your most hotly tipped young chef in Ireland today?

Dan Hanningan, I've been fortunate enough to cook with him at a few of his food for though dinners, which is for an amazing cause. He has recently left his head chef role at Mister S to work on some projects so he is definitely one to watch!
