Q&A with Rob Krawczyk

We caught up with Rob Krawczyk owner and head chef of Michelin-starred Restaurant Chestnut...check out what he told us!

What is your favourite thing on Chesnut’s menu and why?

That's a hard one to answer as I have so many and the menu is constantly evolving with the season but this is one that has been on our menu since we opened and it the beginning of our Tasting menu. Our Home Made Brown Soda Bread which we make from single variety stone-ground organic flour with our own buttermilk which is a by-product when we make our cultured butter. We smoke it with turf and finish it with gold sea salt and serve it alongside the bread.


What would be your desert island meal? (Starter/Main/Dessert)

For Starter, it would ceviche. Main, lobster and for dessert, blackberry crumble.


What is your favourite seasonal dish?

I like game season and using venison.


What drink would you pair with it?
A beautiful Spanish Tempranillo. 


What is your favourite restaurant in Ireland and why?
Klaw Seafood Cafe in Dublin, I love eating oysters and a pint.


What is your favourite dish in Ireland and why?
Anything with seafood- can't get enough!  


Who is your most hotly tipped young chef in Ireland today?
Conor Halpenny is doing great, he recently opened his own restaurant Square, in Co. Louth, one to watch!
