Q&A with Mark Senn

We caught up with Mark Senn of Veginity ...check out what he told us!

What is your favourite dish on the menu at Veginity and why?

My Favorite dish on the menu is our Greek-inspired Watermelon and Tofu Feta Salad with pickled Watermelon Rind.  Some people think tofu is boring and it can be quite bland if not prepared correctly.  With the tofu in this dish, I Compress and ferment it so it has an amazing tang, and also breaks down the texture of the tofu to make it really smooth and creamy.  The watermelon is such a fresh splash of summer when combined with fresh mint, and the pickled watermelon acts as a palate cleanser for the dish and makes it really come alive

What would be your desert island meal? (Starter/Main/Dessert)

Would it be bad if I start with dessert first?  I'd have to say a boca nigra with fresh raspberries and a vegan vanilla ice cream. The bourbon in the dessert adds such depth to the already rich chocolate cake.  It's like a layer below the chocolate and makes the chocolate flavour really shine.  Then for my starter Id have Sri Lankan hoppers.  It's like a cross between a doas and a crumpet, made with rice and coconut then fermented and cooked in a small wok shaped bowl. So it's very light and crisp but has a soft middle, you can put a number of fillings in it but for me would be a simple curry leaves caramelized onions and fresh coconut and tomato sambol.  For mains Id have to go for Ethiopian injera, again it's a flatbread that is fermented and has slight sourdough notes, it's cooked similarly to a crepe then topped with stews and fresh salads.

What is your favourite seasonal dish?

Kinda in-love with Korean hot pots at the moment.  A while ago we had Korean Hot Pot with chilli black beans on the menu, with fermented tofu and pickled daikon in a caramelized vegetable broth.  Amazing for the colder month, with a bit of heat, spice and touch of sourness for the balance.  Definitely ate that every day when it was on the menu 

What drink would you pair with it?

Very much a beer man (showing my Aussie Roots)  Something Crisp and Bighty with good floral notes, dare I say Little Creatures pale ale from Western Australia?  Maybe I'm a little homesick!!  But Little Creatures hit me up with a slab  :)

What is your favourite restaurant in Dublin and why?

Love the guys at Meet Me in the Morning.  everything is always first class and they really push the freshness elements,  Amazing cosy little venue. 

What is your favourite dish in Dublin and why?

The Vegan Pho at Aobaba. I add the very hot chilli paste on the tables  Just love the buzz of the place, it's always packed, very unpretentious, hard-working people making fab food, it's my favourite day out with my daughters 

What is your favourite thing about Taste?

I love the variety of things at Taste. Its' some of the best-known names and innovators in Ireland getting together and really shaping what Irish Food culture can be.  The whole world is opening up and it really does bring all this to Ireland's doorstep, as well as showcase some of the best of Irish produce.
