What is your favourite thing on Rosa Madre’s menu and why?

I have to say it’s very hard to choose but if I have to would be wild seabass saltcrusted or tonnarelli with lobster. We are very lucky in Ireland to have access to such amazing ingredients


What would be your desert island meal? (Starter/Main/Dessert)

Starter:

Carpaccio of red prawns with caviar beluga 

Main:

Tagliolini with white truffle 

Dessert:

Mont Blanc 


What is your favourite seasonal dish?

My favourite seasonal dish is tomatoes in general... tomatoes to me means summer - the smell of fresh basil brings me back to my younger years... spaghetti pomodoro e basilico is my favourite seasonal dish! Like a proper Italian!


What drink would you pair with it?

A lovely Sangiovese maybe aged but not too much so would match perfectly with the freshness of the flavours.


What is your favourite restaurant in Dublin and why?

My favourite restaurant is Patrick Guilbaud... because it’s amazing that even if they have two Michelin stars when you enter it feels like home, I love their wine list - it is the best in the country - my friend Joey is doing a great job! For the food The Greenhouse is absolutely amazing. Their dishes are like art on a plate


What is your favourite dish in Dublin and why?

My favourite dish is the pigeon that I had a year ago in Glover's Alley ... it was perfection!


Who is your most hotly tipped young chef in Ireland today?

The hottest chef at the moment is Aoife Noonan .... the best desserts I've ever had in my life!
