We caught up with Katie McCann, Head Chef at Gertrude (& Kombucha brewer extraordinaire)..check out what she told us!
What is your favourite item on the menu at Gertrude and why?
The Mushrooms Soup with Truffle Arancini is my favourite dish in Gertrude. It is the perfect balance of comfort food with a bit of luxury added to it. People seem to love it as it is one of our best sellers. I have it twice a week for my lunch.
What would be your desert island meal? (Starter/Main/Dessert)
Since I'm surrounded by water, it has to be fish.
For starters, Fresh Crab with a Cress Mango Salad and Avacado.
Main would be Hot Buttered Lobster
Grilled Pineapple and Coconut Sorbet with a shot of Limoncello.
What is your favourite seasonal dish?
I love mince pies. The ones we serve in Gertrude have an Amaretti Topping and Custard -these just make me happy on a cold winter's day.
What drink would you pair with it?
A nice glass of Port.
What is your favourite restaurant in Dublin and why?
This is such a hard question to answer because there are so many amazing restaurants in Dublin at the moment. If I had to name one it would have to be Etto its always a classic.
What is your favourite dish in Dublin and why?
The Truffle Mac & Cheese from Boco, again comfort food with truffles...what more could you want?
Who is your most hotly tipped young chef in Ireland today?
It is very hard to just pick out one. There are so many young chefs doing amazing things at the moment. With the massive shortage of chefs, I think its important to celebrate and appreciate them all.
