What is your favourite dish on Aniar’s menu and why?
It would have to be our oyster and seaweed dish. For me, oysters and seaweed are particular to the Irish psyche. There are two foods that we have been eating for thousands of years.

Spring lamb with nori seaweed.
What drink would you pair with it?
An organic German pinot noir.
What is your favourite restaurant in Ireland and why?
It depends on my mood and who I'm eating with. For fining dining, The Greenhouse. For burgers, Handsome Burger in Galway. My kids love Milano. I love to relax in Cava eating tapas and drinking wine. Then, I love some Japanese for lunch (Kappa-ya). That is the reality of eating in Ireland in the 21st century.
Who is your most hotly tipped young chef in Ireland today?
Grainne Mullins. She is a fantastic baker and pastry chef. One to watch.
