What is your favourite dish on the menu at Spitalfields and why?

Our Cock-a-Leekie Pie which is chicken, leek, mushroom covered in lattice pastry is for two people. When we serve it, people nearly always say ''we’ll never finish that'', but when we clear it’s always completely finished.


What would be your desert island meal? (Starter/Main/Dessert)


Crab Creme Brûlée, Pickled Cucumber, Cornerstone Toast


Confit Duck , Beluga Lentils


Eton Mess


What is your favourite seasonal dish?

Game Pithivier (game meat pie), the season is Oct - Jan


What drink would you pair with it?

A good big Gevrey Chambertin


What is your favourite restaurant in Dublin and why?

The Greenhouse. A two-star Michelin, inspired cooking with the finest ingredients by Mickael Viljanen, complemented by professional, friendly service led by Darren Campbell. 


What is your favourite dish in Dublin and why?

Lobster Roll at The Seafood Cafe. Having lobster in a brioche roll with mayonnaise is my comfort food. 



Who is your most hotly tipped young chef in Ireland today?

Conor Halpenny who won the Eurotoques Young Chef a couple of years ago and now doing some great cooking as the head chef in Square Restaurant in Dundalk. 


What is your favourite thing about Taste?

The big mix of different restaurants & cuisines along with the great staff at each venue always makes for an enjoyable weekend.
