What is your favourite thing on One Pico’s menu and why?
Probably our Lobster Ravioli with Crab Bisque and Truffle, it is such a delicate dish but we pack it full of flavour, makes you want to order another one

Wicklow Venison from Wild Irish Game, one of my Favorite dishes to put on the menu we serve it with preserved elderberries and beetroot

A lovely 1985 Chateau Lynch Bages, One of my Favorite wines
What is your favourite restaurant in Dublin and why?
I think we have a lot of great restaurants in Dublin that have such a diverse style that it would be really hard for me to choose they are all brilliant at what they do
What is your favourite dish in Dublin and why?
Hands down Dublin Pizza company Pizza, we order after service every Saturday night for the team so so good and so consistent
Who is your most hotly tipped young chef in Ireland today?
I think we have a lot of good talent coming through, especially judging from the last few years of the euro toques young chef competition, the standard of young chefs its amazing they all have bright futures ahead
