Q&A with Cathal Dunne

We caught up with Cathal Dunne head chef at Suesey Street...check out what he told us!

What is your favourite dish on the menu at Suesey Street and why?

My favourite dish on the menu at the moment is the Wicklow lamb cutlets with confit belly and wild garlic’ because the lamb we get is such a great product and the breadcrumbed belly reminds me of a childhood dish.


What would be your desert island meal? (Starter/Main/Dessert)

A seafood platter to start with prawns, oysters, lobsters etc, to follow a ribeye or cote de boeuf and for dessert a strawberry pavlova.


What is your favourite seasonal dish?

My favourite seasonal dish would be a tomato salad with burrata or grilled tuna.


What is your favourite restaurant in Dublin and why?

My favourite restaurant would have to be Suesey Street because it’s such a great place to work, good atmosphere, good food and cocktails. Another favourite restaurant would be The Greenhouse because of its great food, and because of Mickael Viljanen their head chef. He is such a talented and dedicated chef, plus the work he is doing for charity, deserves full credit.


Who is your most hotly tipped young chef in Ireland today?

My most hotly tipped young chef would be ‘Eric Mathews from Chapter One, just for the work he has done on social media during the lockdown, amazing.


What is your favourite thing about Taste?

I love Taste because it’s a great chance to meet my peers and taste some of the wonderful food they are cooking, along with some social drinks.
