What is your favourite dish on Myrtle Restaurant’s menu and why?

Ask me this question every day and I’ll give you a different answer. Today I feel like chocolate our carageen moss chocolate mousse which is a pleasure when I’m doing the quality tests. Its base is a Guinness chocolate sponge topped with a whipped carageen chocolate mousse flocaged with dark chocolate and served with a chocolate Irish mist


What would be your desert island meal? (Starter/Main/Dessert)

Starter:

Vitello tonnato  And a nice palo cortado 

Main:

Mams roast chicken, Sugrue The troubles with dreams sparkling wine. 

Dessert:

Crozier blue and some killahora ice wine


What is your favourite seasonal dish?

Has to be hands down a really good tomato consommé


What drink would you pair with it?

Fruity floral number Sancerre


What is your favourite restaurant in Dublin and why?

L'Ecrivain is an absolute institution - get booking before it’s too late!


What is your favourite dish in Dublin and why?

A ham and cheese toastie from Grogans with a pint  


Who is your most hotly tipped young chef in Ireland today?

Grainne Mullins, I believe this woman will do fantastic things  


What is your favourite thing about Taste?

The eclectic mix of food and chefs!
