JR Ryall is head pastry chef at Ballymaloe. Having worked closely with the visionary Myrtle Allen for 15 years his appreciation of Irelands best produce is evident in the simple food he loves to cook.

JR travels the world for 2 months each year in search of new flavours, ideas and food connections. Recent adventures have brought him to the home of Diana Kennedy in Mexico, the kitchens of Tartine Bakery in California, restaurants throughout North and South America, street food stands across Asia and even the White House!
