Executive Head Chef Gareth Mullins is responsible for all menu design and food preparation in The Marker Hotel’s four kitchens. With over 20 years’ experience cooking in five-star hotels in Ireland and Australia, Gareth spent seven years in the Merrion Hotel, where he was Head Chef in The Cellar Restaurant & Bar. During his tenure at The Cellar, the restaurant received two AA rosettes and the bar was recommended in the Michelin Guide.
Gareth makes frequent appearances on TV and radio including The Six O’ Clock Show and The Pat Kenny Show with previous appearances on Late Lunch Live, Operation Transformation, Radio Nova and has also been featured in the Irish Times, Sunday Business Post, Food & Wine and Yes Chef Magazine. The Brasserie at The Marker has been awarded the accolade of two AA rosettes and “Best Hotel Restaurant in Dublin” in both 2016 and 2018 at the RAI awards under Gareth’s leadership and was also chosen to cook the main course at the 2017 Restaurant Association of Ireland Awards for 1,000 industry peers.
Gareth has a huge passion for locally sourced Irish produce and uses them in each recipe he creates. This passion is reflected in Gareth's new appointment as Commissioner General of Eurotoques Ireland which consists of 200 of the country's best-known chefs, producers and educators with an aim to protect our Irish culinary heritage and inspire future generations.
