Alvaro Fuentes Pérez, born in 1985, is the owner and chef of the Meloxeira restaurant, in the region of Galicia, since 2013.
He studied restoration at the prestigious “Carlos Oroza” Institute of Culinary Education in Pontevedra, and started his career under the guidance of the Michelin starred chef Pepe Solla, from “Casa Solla”. He then went international working in London at places such as “Home House Club” and “Coya London”. After coming back to Spain, he did his staging period in the 3-star Michelin restaurant “Lasarte” restaurant with the chef Paolo Casagrande.
Passionate about traveling and learning about new flavours and ingredients, he had done several cooking courses all over Asia. Becoming a hobby of his own to learn dishes from distant places such as Japan, China, South Korea, Peru or Mexico, always looking for new ways to merge this new knowledge with his own cooking skills.
His passion for cooking began in San Vicente de O Grove at his mother’s beach restaurant, dedicated exclusively to coo in a strictly traditional Galician cuisine. From that beginning, his studies and travels, he founded the “Meloxeira” restaurant, where once can find a high quality of pintxos paired with the best wines, as well as tasting menus influenced by his new experiences in cuisines from all over the world.
