Born and raised in a small town near Milan, Pieve Emanuele, Alberto Rossi is InterContinental Dublin’s Executive Chef. Although Italian, Alberto has strong family connections in Ireland, as his grandparents are from here. Along with his siblings, he regularly visited his grandparents in Ireland and initially stayed with them when he first came to Dublin.
Growing up in a small village, he learned to appreciate the food culture around him and remembers helping his mum to bake cakes and pies. This, he feels, shaped his future. He started cooking when he was thirteen years old, after watching his mother and his father's aunt; Great Aunt Giovannina, who was a chef, sharing their expertise and family recipes in the kitchen. He still remembers his Great Aunt Giovannina’s Lasagne.
He first began working in a professional kitchen when he was sixteen years old, while studying for a Diploma in Cookery and Hotel Management from IPSSAR Vespucci in Milan. Over the years, Alberto honed his apprenticeship in different Restaurants in Milan. Following this he joined the Four Seasons Hotel Dublin in 2002 where he worked for three years. In 2006 he took a year travelling through New Zealand, learning about their approach to Food and Culture.
After that he came back to the Irish shores to be part of the opening team at The Gordon Ramsey Restaurant at The Ritz Carlton, Powerscourt becoming a Sous Chef. This was followed by a successful time at the acclaimed Oliveto Restaurant in Dun Laoghaire as Head Chef. Alberto then returned to the Four Seasons Hotel Dublin in 2011 and was promoted in 2012 to Executive Sous Chef.
Alberto was appointed Executive Chef, when The MHL Hotel Collection purchased the Hotel and it became InterContinental Dublin.
Alberto is responsible for the Hotel's culinary direction and is constantly creating new menus, selecting only the freshest local produce from the finest Irish suppliers.
