Simon's first love is seafood; and in particular oysters.Simon Lamont is an omnivorous foodie, zealous restaurant manager and classically-trained pastry chef. He has worked in top kitchens, 5-star hotels, award-winning restaurants and funky bars from Boston to London, via Capetown and Bordeaux!Simon honed his culinary skills at DIT Cathal Brugha Street and in local restaurants in Dublin city before packing his bag of chef’s knives and hitting the road.

A chance encounter with a TV producer led to the filming of TV3’s The Lazy Chef, a delicious road trip that highlights some of Ireland’s best kept culinary secrets. Simon got stuck in with local food producers across Ireland and demonstrated his fun, tasty and lazy style of cooking. In 2016 The Lazy Chef was picked up by the Spanish Food Network, Canal Cocina and Simon can now be seen en español across Spain and Latin America: Ariba!

Simon has worked with London’s Wright Brothers Oyster group for the past 6 years as a restaurant manager, chef and creative consultant. In 2013 Simon helped create and set up the Wright Brothers' third concept Oyster Bar & Restaurant in London's Spitalfields Market. In 2016 Wright Brothers Spitalfields Market was voted Best Restaurant in Britain for Chefs by the Observer Magazine.

In the summer of 2015 Simon helmed his first "pop-up" restaurant, an Oyster Bar in London’s infamous Borough Market, called Shuck (@shuckldn). Serving up the tastiest oysters from the UK & Ireland three ways - Naked, Dressed or Blown (Blowtorched) - with Guinness and Prosecco on draught, Shuck was a huge success.

Simon currently splits his time teaching Oyster Masterclasses and cheffing in the four Wright Brothers restaurants - Borough Market, Soho, Spitalfield and South Kensington. As the creative director and head chef of Shuck, Simon is also looking to make her permanent fixture on the London Food Scene this year.

Simon is delighted to be returning home to Taste of Dublin 2017 this summer, to share his passion for Irish food with his fellow Irish foodies.
